The Physics of the V60

The Hario V60 is distinguished by its 60º cone angle geometry, a large bottom hole that doesn't restrict water flow, and internal spiral ribs that allow air and gases to channel out during the bloom.

Materials: The plastic model is superior for thermal stability compared to ceramic or glass, as it absorbs less energy (heat) from the brewing water.

Pre-brew Preparation

Fold the paper filter along the seam. Place it in the cone and rinse it thoroughly with hot water (at least 100 ml). This removes the wood/paper cellulose taste and preheats the cone, maximizing the extraction temperature.

Recipe 1: Standard 3-Pour (Adapted from Hoffmann/Rao)

  1. 0:00 - Bloom: Pour 45-50 g of water (3x the coffee weight). Give it a gentle swirl to wet all particles. Wait until 0:45.
  2. 0:45 - Second Pour: Pour gently in concentric circles until you reach 150 g of water.
  3. 1:15 - Final Pour: Continue until 240 g of water. Finish with a very delicate swirl to ensure the coffee bed settles completely flat.
  4. Drawdown time: Full drawdown should occur between 2:45 and 3:15.

Recipe 2: Tetsu Kasuya 4:6 Method

Use a coarser grind (~1000 µm) and slightly increase the dose to compensate.

  • Initial 40% (Acidity/Sweetness Balance): Divided into two pours (e.g., 50g + 70g for more sweetness, or 70g + 50g for more acidity). Let it drain completely between pours.
  • Final 60% (Body/Strength): Divided into three equal pours (40g + 40g + 40g) for more strength, or two (60g + 60g) for a lighter cup.
