Conical vs. Flat Burrs
One of coffee's eternal debates. The point isn't which is "better", but what grind distribution each one produces and how that affects flavour, body and your method. Here it is without the hype, with the real pros and cons.
The real crux: particle distribution
Both conical and flat are burrs: they crush the bean between two toothed pieces at an adjustable distance, unlike blades, which chop at random. The difference between them is less about "how much they grind" and more about how they spread particle sizes. And that spread is what changes extraction: more uniformity tends to give clarity, while more size variety tends to give body and texture.

A toothed cone spins inside a ring. Coffee falls by gravity and exits the sides. They tend toward a slightly bimodal grind (two size clusters), which adds body, sweetness and a rounder texture. In traditional espresso that variety builds resistance and a denser shot.
They are very efficient (less power, less heat), which is why they dominate in hand grinders and many home electrics. They tend to be cheaper to make and replace.

Two parallel toothed discs face each other; coffee is thrown to the edge by centrifugal force. Well aligned, they produce a more unimodal grind (particles around one dominant size), giving clarity and flavour separation, prized in modern filter.
In return, they often spin faster and generate more heat and a bit more retention, and depend heavily on good alignment to perform. Large diameters (64 mm or more) raise the price.

Which should you choose?
If you love espresso and body
Conical is a safe bet: sweetness, texture and efficiency. It's what you'll find in almost every manual espresso grinder.
If you live in filter and want clarity
Well-aligned flat burrs shine in V60 and Chemex, separating floral and citrus notes crisply.
If you just want a good daily coffee
Don't obsess over shape: prioritise a quality burr grinder within budget. Conical vs flat is a nuance next to the leap of ditching blades.

Frequently asked questions
What do bimodal and unimodal grind mean?
They describe the shape of the particle-size distribution. A bimodal grind (associated with conical burrs) shows two clusters of sizes: one of fines and one of coarser particles. A unimodal grind (associated with well-aligned flat burrs) concentrates particles around a single dominant size. In practice no grind is perfectly uni- or bimodal: these are tendencies, and the result depends heavily on burr quality and alignment.
Do flat burrs always taste better?
No. Flat burrs tend to give more clarity and flavour separation (prized in modern filter) thanks to a more uniform grind, but they need good alignment to shine and can run hotter with more retention. Conical burrs add body and sweetness, are very efficient and dominate in hand grinders and much of traditional espresso. 'Better' depends on the method and your taste, not on burr shape in the abstract.
As a beginner, should I obsess over conical vs flat?
No. Below the high end, the difference between a decent conical and a decent flat burr is smaller than the gap between a good burr grinder and a blade grinder, or between well- and poorly-aligned burrs. Prioritise a quality burr grinder within your budget; burr geometry is a secondary nuance until you start fine-tuning.
Which lasts longer and is cheaper to replace?
Both, in steel, last thousands of doses in home use (often years). Conical burr sets are usually cheaper to replace and common in hand grinders; large flat burrs (e.g. 64 mm) can be pricier. Real lifespan depends more on grinding stones or foreign objects than on burr type.
